How to Make Cookies: Caramel Apple Envelopes

  • Cottage cheese - 200 g
  • Wheat flour - 200 g
  • Butter - 190 g or margarine
  • Apple - 400 g
  • Sugar - 80 g
  • Lemon juice - 1 tbsp
  • Cinnamon - 0.5 tsp
  • Salt - 1 pinch (s)
  • Powdered sugar - to taste for dusting


  • To prepare cookies - envelopes with caramel apples, prepare butter 180 + 10 g: 180 g will go into the dough, and 10 g into the filling.

    The oil should be soft, at room temperature.
    It is better to take fine-grained cottage cheese. I have it with a fat content of 9%.
    Sift the wheat flour in advance.
    Take hard apples.

  • Put flour, butter in a bowl and grind everything into crumbs.

  • Add a pinch of salt, cottage cheese and quickly knead the dough.
    While the caramel apples are being prepared, put it in the refrigerator, wrapping it with cling film.

  • Peel and cut the apples into small cubes, with a side of about 1.5-2 cm.
    Sprinkle them with cinnamon, pour over the lemon juice and stir.
    If you like cinnamon, then the amount can be increased to taste.

  • Melt butter in a frying pan, addsugar and on low heat bring it until a slight color change towards caramel.
    Add apples and stir for a couple of minutes, until the apples are slightly golden brown due to the caramel.
    Turn off the fire.

  • Roll out the dough on a floured surface, about 3-4 mm thick and cut into squares, about 8 centimeters on a side.
    Place a spoonful of caramel apples on the center of each square.

  • Pinch the edges well, making an envelope.
    If the edges are loosely adhered, then during baking they can disperse.

  • Bake in an oven preheated to 180 degrees for about half an hour.

    Sprinkle the finished cookies with icing sugar.
