  • soaking dried mushrooms;
  • defrosting frozen;

Important! When preparing dishes with a delicate consistency, it is imperative to separate the caps from the legs and take only the caps that remain tender after any processing. The legs will ruin the delicate dish due to their fiber and stiffness.

How and how much to fry

To fry the mushrooms, their caps should be cut, the legs should be broken lengthwise into small pieces. After preheating a frying pan, pour 2 tablespoons of oil there, place the shiitake and fry without covering the pan with a lid.

The wood mushrooms will remain juicy during the frying process and will become tasty when cooked over medium heat for about 5-7 minutes and stirring with a wooden spatula without stopping until the juice evaporates. At the end of frying, the dish must be saturated with the taste of spices and onions.

First, put the shiitake in a colander and pour boiling water over it to wash off the dirt.

For cooking, they should be placed in a saucepan with boiling salted water in the ratio - 300 gr. dry mushrooms per 1 liter of liquid. They should not cook for so long - about 7-10 minutes over medium heat.

The recipe for this dish requires the following amount of ingredients for 1-4 servings:

  • fresh or dried wood mushrooms - 0.5 kg;
  • sour cream - 2 tbsp. l .;
  • onion - 1 pc.;
  • garlic - 1-2 cloves;
  • black pepper - 1 pinch;
  • a bunch of greens to taste;
  • a mixture of spices to taste;
  • sunflower oil (or other vegetable) - 50 g;
  • animal oil - 50 g.

The cooking process consists of a few simple steps:

  • In fresh shiitake, the legs are removed from the caps and cut into medium-sized pieces. Dried mushrooms are pre-poured with water to restore volume, then let it drain a little or squeeze slightly.
  • Peel and cut the onion into cubes.
  • Preheat a frying pan and pour oil into it.
  • First, some shiitake legs are lowered into the pan, after they are fried, chopped hats. Stir the contents of the pan periodically.
  • Sour cream, onions and garlic, salt are presented 10 minutes before the finish line. You can season with a little mayonnaise.
  • Season with spices.
  • Cooking takes about 35 minutes.

    Serving on the table, the shiitake should be laid out on a plate and garnished with herbs. It is recommended to serve the dish with a side dish or croutons.
