Ingredients

  • Milk - 2 cups
  • Cream - 2 cups
  • Sugar - 3/4 cup + 1/2 cup
  • Gelatin - 3 tsp + 1.5 tsp
  • Raspberries - 3/4 cup
  • Strawberries - 1.5 cups
  • Water - 1/4 cup

Cooking method

  • Pour gelatin into cold milk, stir, set aside.
  • Heat the cream to a boil.
  • Pour the sugar into the cream and stir well to dissolve the sugar.
  • Combine milk with gelatin and cream with sugar. Stir until the gelatin dissolves. If gelatin does not dissolve in any way, then put a saucepan with milk and cream on a low heat and heat the milk mixture a little more until the gelatin dissolves. But don't bring it to a boil! You can only heat a little, no more.
  • Place the saucepan in another bowl of cold water and let the panna cat cool down to at least room temperature.
  • Meanwhile, pour the washed berries into a saucepan, add sugar and water.
  • Turn on the heat and let it boil for 2-3 minutes.
  • Remove from heat, and blender pulsate a couple of times so that there are no large pieces of berries.
  • Rub through a sieve. With this amount of products, you should get about 2 glasses of berry puree.
  • Take 1/2 cup puree and heat, but do not bring to a boil.
  • Add 1.5 teaspoons of gelatin and stir until the gelatin dissolves.
  • Then add 1/2 cup puree to the rest of the puree and mix well. Place the bowl of mashed potatoes in another bowl of warm water to keep the puree from hardening while the first layer of panna kota hardens. By this time, the cat's panna should already be at room temperature.
  • Prepare the cups in which you are going to make panna for the cat. If you want to have "slanting" layers, then place the cups at an angle, propping them up so that they do not wobble and place them in the refrigerator closer to the edge so that it is easy to pour panna cat into them right away. If not, just put the cups straight in the refrigerator.
  • Pour in the pan cotta until the glass is 1/3 full. Return the jug of milk liquid for panna cat to the vessel of warm water so that while the panna cat in the fridge freezes, this one does not freeze in the jug either. When the first layer hardens, pour the berry layer and return the jug of berry mixture to warm water again.
  • When the berry layer hardens, fill it with white liquid for panna cat again.
  • Let the panna cat freeze completely.
  • How and with what to serve

Serve cold, garnish with fresh berries and mint leaves.
