
Sometimes you really want to bring summer closer and feel its warmth. Baking with summer berries comes to the rescue, I suggest making a Viennese cherry pie. Almost every housewife has stocks of summer berries in the freezer, but if cherries were not found there, then you can always buy a package of frozen cherries in the store. This cake can be baked with any other berry, for example, currants or raspberries, but that's a completely different story.

How to make a Viennese cherry pie
- Cherries - 350 g frozen or fresh (with seeds)
- Chicken egg - 2 pcs.
- Sugar - 65 g
- Vanilla essence - to taste
- Flour - 100 g
- Butter - 90 g
- Baking dough - 0.75 tsp
- Salt - pinch (s)
- Powdered sugar - 1 tbsp

I am baking a small cake in an 18 cm tart, if you want a 24 cm cake, double the ingredients.
To make a Viennese cherry pie, you need to preheat the oven to 180 degrees. Grease the form with butter.
Beat the rest of the butter at room temperature with sugar until a light cream is formed.

Add eggs and vanilla essence and beat well again. If there is no essence, you can replace it with vanilla sugar, a pinch of vanillin, or vanilla extract.

You should get a homogeneous fluffy mass.

Sift flour with baking powder and a pinch of salt. Gently use a spatula to add flour into the dough in several steps and mix. Do not stir the dough for too long, otherwise it may become too dense.

Transfer the doughinto shape and smooth with a spatula. Arrange the cherries in one layer.
I don't defrost baking cherries. I pour hot water over it and immediately remove the bones. I spread the cherries in one layer, especially if they are very large. For a larger portion of the pie, this is not very critical, but for a pie in a small form, yes. Cherries can produce a lot of juice and the cake may not bake well in some places.

Sprinkle the Viennese cherry pie on top with almond petals and bake at 180 degrees for about 25 minutes. Check with a wooden stick. If necessary, increase the baking time by 5-10 minutes.
It is better to initially buy almonds in the form of thin petal plates. When baked, they become crispy and contrast nicely with the soft dough and juicy cherries.

Let the cake cool for a few minutes and remove from the mold.

Sprinkle with powdered sugar on top.
