How to make beetroot salad with herring and grapefruit

  • Beets - 4 pcs.
  • Grapefruit - 2 pcs. Red
  • Red onion - 1 pc.
  • Herring - 2 pcs. fillet
  • Olive oil - 50 ml
  • Honey - 1 tsp
  • Wine vinegar - 1 tbsp white
  • Salt to taste
  • Black pepper - to taste

Preparation: Step 1

  • The most useful, of course, is the beetroot baked in the oven, but this method will take a lot of time to bake the root vegetable. And when you need to quickly cook beets, use the microwave. In addition to quick cooking, this method also preserves vitamins and a bright saturated color of beets as much as possible, moreover, no dirty dishes.

Wash the selected beetroot tubers thoroughly, do not dry. Prick the surface in several places with a toothpick.

  • Fold the beets in a baking bag, tie it up and be sure to make some holes for the steam to escape.

Place a plate of beets in the microwave and turn it on at the highest power, cook for 10-15 minutes. When it turns off, keep the beets in the oven for another 5-7 minutes - the cooking process is still going on. The cooking time here depends not only onthe power of your microwave, but also on the number and size of beet tubers.

  • While the beets are "baked", you need to extract the "fillet" of grapefruit. This is done very simply.

First, cut off the top and bottom of the fruit until pulp.

    #
  • Cut the peel into strips - as shown in the photo.

    #
  • The boundaries of the lobules between the membranes became visible - cut these lobules along them.

    #
  • Pour the juice remaining after cutting the grapefruit into a bowl - it will be needed to make the sauce.

    #
  • To prepare the sauce: use a fork to combine the grapefruit juice, olive oil, honey and vinegar. Add salt and black pepper to taste.

    #
  • Chop the rest of the salad. Herring fillet - in portions, onion - in thin half rings. Peel and chop the beetscube or plates.

    #
  • Arrange the prepared food on plates, sprinkle with parsley leaves and pour over the sauce.
Here is a new modern taste in the classic combination of beets and herring! I hope you enjoy it too!
