Ingredients

  • Large potatoes - 1/4 pcs.
  • Red onion - 1/2 pc.
  • Egg at room temperature - 2 pcs.
  • Chicken broth - 400 ml.
  • Whipped cream - 400 ml.
  • Butter - 1.5 tbsp
  • Croutons - 2 tbsp
  • Olive oil - to taste
  • Leeks - 1 pc.

Cooking method

  • Remove the green leaves from the leek and cut it in half lengthwise, wash under running water and cut into thin slices
  • Melt the butter in a saucepan over low heat. Add chopped red onion and cook for 5 minutes until soft but not darkened. This will help remove the sweetness of the onion.
  • Add the chopped leeks and cook for another 10 minutes, stirring occasionally

  • Pass the soup through a fine sieve to avoid lumps and let cool. When the soup has cooled a little, put it in the refrigerator as it should be cold enough
  • While the soup is cooling, prepare the eggs. To do this, place them in boiling water and cook for 3 minutes, then place them in cold water to cool. Then clean and place in a jar or warm water
  • When the soup has cooled well, stirring occasionally, pour the whipped cream into it and season with salt and pepper
