  • How to make bouillabaisse soup

    First of all, we must prepare the broth, for this

  • Fillet the fish, don't throw away the waste, we'll need it
  • Finely chop the celery, 1 onion, 2 cloves of garlic, and the whole leek
  • Saute all vegetables in oil
  • Rinse the fish waste and put it in the pan with the roasting vegetables. Be sure to remove the gills from the fish heads, as they will add bitterness to the broth.
  • Pour in enough water to cover the vegetables and fish trimmings and simmer for 20 minutes, skimming off the foam.
  • Then turn off the broth and let it brew for at least 1 hour.
  • Strain the broth, and wipe the vegetables from the broth through a fine sieve, we will need them soon.

  • Cut the tomatoes, scald with boiling water and remove the skin from them.
  • Finely chop the peeled tomatoes.

  • Pour strained broth, strained vegetables and spices into fried vegetables.
