Recipe for yeast fluffy pancakes with whey holes
This recipe can hardly be called quick and easy. But all your hard work will pay off with the very first piece of pancake. They turn out plump, airy, covered with small holes - a real sun! With all the time and effort, even a beginner can handle it. After all, we will consider a step-by-step recipe with a photo.

For cooking we need:
- Flour - 400 g.
- Eggs - 2 pcs.
- Serum - 650 ml.
- Sugar - 1 tbsp
- Butter - 50 g.
- Fresh yeast - 20 g.
- Salt - 0.5 tsp
Cooking:
Step 1. Pour about half of the whey (it should be at room temperature) into a bowl. Here we crumble yeast. We leave for 5-7 minutes. Then just mix everything. If you mix earlier, it will be more problematic.
Milk can be used instead of whey.

Step 2. Add a couple of pinches of sugar here. Sift directly into the yeast solution a few tablespoons of flour from the total. Mix everything well until it becomes a thick cream. Sprinkle a little more flour on top and, without stirring, put it in heat for an hour. It is better to cover the top of the bowl with a napkin. Then mix the mass that has risen 2 times.
Someone withstands the dough until it rises, and someone until it begins to fall off. You can do as you are used to or according to the availability of time.
Step 3. Dissolve salt and granulated sugar in the remaining whey.
Step 4. We send egg yolks to the dough. We remove the squirrels for now, they will be useful to us later. Also add in the melted butter. We stir everything until smooth.

Step 5. Now, alternately, 1-2 tablespoons, we introduce whey into the dough first, then flour. Mix well after each addition. As a result, the dough should not be liquid, but not thick.

Step 6. We cover the bowl with the dough with a film. We clean in heat for another 1-1.5 hours. It will increase in size again. Then stir it so that the mass falls again. Again, cover and remove for a secondary rise. This time it will come faster, in about half an hour.

Step 7. Beat the whites with a mixer until a stable foam. Mix the dough again. Now we shift the whites here.
Step 8. In one direction, from bottom to top, mix them gently, until even. Let the dough rest for another 20 minutes.

Step 9. We start baking pancakes. Heat up a frying pan with a thin layer of oil. Pour a ladle of dough here, distributing it over the entire bottom. The dough does not spread quickly, as it is thicker than the dough for thin pancakes. When the circle is covered with holes on top, the damp areas will disappear, you can turn it over. We bake on moderate heat.
If the pan is non-stick, then greasing it once will be enough. If not, then you will have to oil before each pancake.

Step 10. Lubricate each product with butter and stack it in a pile, on top of each other. Serve immediately while hot!
The recipe for fluffy whey pancakes with holes like a grandmother's
Lush, soft, airy - just like in the village with my grandmother! It's not difficult to prepare, but it turns out incredibly tasty. As a liquid ingredient, you can take whey, milk or liquid kefir.

For cooking we need:
- Whey (kefir, milk) - 2 cups
- Half a teaspoon of salt
- Vanillin to taste
- teaspoon of soda
- 2 cups of flour
- 2 raw eggs
- Tablespoon of granulated sugar
Cooking:
1. Pour raw eggs into a spacious bowl. Stir them with a whisk until the maximum discrepancy between the protein and the yolk.

2. We alternately introduce soda, sugar, salt and vanillin here. Stir well after each addition. Add vanilla to taste. If you do not like it, you can not add it at all - this is an optional component. Pour in warm (not hot) whey or another liquid from those indicated and stir everything.

3. Now we sift the flour here. Mix everything together until a homogeneous liquid sour cream. Lumps should not remain here. Let's rest for half an hour on the kitchen table.

4. With a cloth (you can also use a paper) napkin or a silicone brush, grease the pan with oil. If you are using non-stick, then no more oiling is required. If not, then this should be done before each pancake or as needed. Warm up the pan well over moderate heat. Now pour 1-2 ladles of dough into the center. We distribute everything in an even circle. How fluffy the product will be depends on the amount of dough.

5. Soon, holes will begin to form on the surface. When they cover the whole pancake, there will be practically no raw dough left, you can turn it over. They will not be perforated from above, this is normal. On the second side, they cook 2-3 times faster.
6. The output is approximately 12-13 pancakes, lush and large. Optionally, you can brush them with butter after baking. It is better to do it only from above. Then, as you place each new pancake on top of the previous one, the bottom side will be oiled from the top of the one on the bottom.
Cooking delicious lush whey pancakes
Spicy, tender, porous - just a feast for the eyes and delicious! The recipe is quite simple. Even those who have not yet encountered the preparation of pancakes and dough in general will cope. Just follow the step-by-step description with a photo and you will succeed!

For cooking we need:
- Eggs - 2 pieces
- Salt - a pinch
- Soda - a teaspoon with a small slide
- Vegetable oil - 2-3 tbsp
- Vanillin - a pinch
- Flour - 2 full cups of medium size (total weight 300 grams)
- Serum - half a liter
- Sugar - 2 tablespoons with a slide
From this amount of products, approximately 12-15 pancakes are obtained.
Cooking:
1. Pour the eggs into a bowl with high sides and wide enough. Next, add granulated sugar and grind everything together with a whisk until a homogeneous mass, without protein clots.

2. Add a pinch of salt, vanillin and knead everything well. You can use a mixer, or you can manually, with a whisk.

3. Pour in half of the total amount of serum (250 ml) here. It should be warm. Pour in the soda and immediately knead everything diligently. The mass will begin to bubble slightly. We leave it until the reaction is completed, bubbles cease to stand out.

4. We mix here first one glass of flour, mix until smooth. Then we send the leftovers, the second glass and mix again.

5. Pour in the rest of the whey. With a whisk or mixer, we achieve uniformity. Thus, it is easier to bring the mass to an even state, to avoid lumps. Finally, pour and mix vegetable oil here.

6. Non-stick frying pan does not need to be lubricated. Warm it up well on medium power. Pour in a portion of the dough, spread around. Bubbles will begin to burst from above, forming holes. When it is all porous, you can turn it over. There will be no holes on the other side.
Before you gain mass before sending it to the pan, it must be mixed. After all, the bottom of the dough is thicker, and the top is more liquid.

7. Thus, we bake products from the entire amount of dough. It takes about 2 minutes to fry one pancake on one side and the same amount on the other. If the inverted circle is not in the middle, but on the edge, then you need to wait until it seizes, and then move it to the center of the pan.
If desired, each such “sun” can be lubricated after frying with a piece of butter. But this is optional.
