Soup Ramen (Ramen) - is a dish of three national cuisines at once - Japanese, Korean and Chinese. The soup consists of two main ingredients - rich broth and wheat noodles. The broth for ramen soup can be fish (shark fin or Dashi broth), chicken, pork, or even a mix of pork and chicken broth.

As for the rest of the ingredients, there are no restrictions - boiled and fried eggs, various mushrooms, soy sprouts, pak choi (Chinese leafy cabbage), all kinds of greens and even seaweed are put in ramen soup.

Ingredients for 3 servings

  • Chicken broth 1000 ml. (how to cook chicken broth)
  • Chicken fillet 300 gr.
  • Udon noodles 200 gr.
  • Green onion 50 gr.
  • Cilantro 20 gr.
  • Soy sauce 100 ml.
  • Ginger 20 gr.
  • Salt and pepper to taste.

Chicken Ramen Soup Recipe Step by Step

  • Put ginger, soy sauce and chicken fillet cut into small thin pieces across the fibers into the chicken broth. Bring the broth to a boil over medium heat and simmer for 10-15 minutes until the chicken is fully cooked. Then strain the broth through a sieve, or remove the ginger and chicken fillet with a slotted spoon. If necessary, season the broth to taste with salt and pepper.
  • Boil udon noodles in salted water. The noodles are cooked for about 5 minutes.
  • Put boiled wheat noodles, chicken fillet in equal parts in three plates and fill with chicken broth. Top with green onions and cilantro.
