The scent of cinnamon, citrus and fresh baked goods is the best way to create a winter holiday atmosphere at home. An orange muffin will do a great job with this "task"! Prepare it according to the recipes we've put together for you.

The most commonly used baked goods are orange peel (usually finely chopped). However, in some recipes, orange pulp is used (in this case, we advise you to peel the fruit from the peel and films) or fresh juice. Less commonly, muffins are prepared with slices of dried oranges.
Orange muffin

In this recipe, orange pulp is used along with zest. To remove the bitterness of citrus fruits, you first need to boil them a little.
Ingredients. 3 large oranges, 150 g almond flour, 100 g sugar, 2 eggs, 1 tsp baking powder, 1 tsp butter.
Instruction. Put oranges (not peeled) in a saucepan, pour boiling water over and cook over medium heat for 5-10 minutes. Then drain the water, cool the oranges, dry and cut into small cubes. Then grind in a blender into a homogeneous mass.
In a bowl, combine with the rest of the ingredients (except the butter), kneading to a smooth dough. Transfer it to a greased mold and place in an oven preheated to 180 ° C. Bake for an hour. Remove from oven, cool slightly and serve.
Peanut Orange Cupcakes

Ingredients. 170 g whole wheat flour or gluten-free mixture, 100 g water, 1 banana, 1 orange, 5 tbsp. l. peanut butter, 5-6 tbsp. l. Jerusalem artichoke syrup or any other, 1 tbsp. l. lemon juice, 1 tsp. baking soda.
Instruction. Mash the banana in a bowl with a fork. Pour lemon juice into it immediately and stir. Peel the orange, cut into small pieces.

Then add the peanut butter, syrup, water, orange pulp and stir again. Pour in the flour sifted with soda, mix thoroughly. Divide the dough into tins and place in an oven preheated to 180 ° C for 20-25 minutes.
Orange polenta muffin

Ingredients . 250 g butter, 200 g sugar, 4 eggs, 140 g polenta, 200 g flour, 2 tablespoons baking powder, zest and juice of 2 oranges, 1 tsp vegetable oil for greasing the mold.
For the glaze: 100 ml of orange juice, 100 g of sugar.
Instruction. Preheat oven to 160˚C. Oil the mold. Melt the butter and whisk with sugar until light and fluffy. Add eggs there while beating.
Then add the remaining ingredients, the zest and the juice of two oranges to the dough. Stir until smooth and place in a greased pan. Put in the oven and bake for 45-55 minutes.
Prepare the frosting: Combine orange juice and sugar in a skillet. Heat over medium heat for 5 minutes, stirring the sugar. Then remove from heat and cool. When the cake is ready and cool to room temperature, pour the icing over it.
"Stone" orange muffins

Ingredients. 1, 5 Art. wheat flour, 1.5 tsp. baking powder, ½ tsp. mixture of spices for pumpkin pie (ginger, cinnamon, cloves, allspice, nutmeg), zest of two oranges, 6 tbsp. l. cold butter, 1/2 tbsp. cane sugar, 1 egg, 5 tbsp. l. milk, ½ tbsp. raisins.
Instruction. Preheat oven to 180˚C. Line a baking sheet with parchment paper. Sift flour with baking powder and pumpkin pie spice mixture. Set aside. Use an electric mixer to beat the butter and sugar into coarse crumbs. Pour the egg into the butter and sugar mixture and stir until smooth.

Add sifted flour and milk. Cut the zest into thin strips. Knead the dough until smooth, add the raisins and orange zest. Stir, evenly distributing the raisins in the dough, but not for too long. The dough should be lumpy and even slightly dry.
Form the dough into lumps with two forks and place them on a baking sheet at a distance of 5 cm from each other. Place the baking sheet in the top of the oven and bake for 12-15 minutes or until golden brown. Remove the baking sheet from the oven and place the cookies on the wire rack. Cool for 15 minutes and serve.
Orange, Blackberry and Pistachio Cupcake

Ingredients . 150 g unsalted peeled pistachios, 170 g softened butter, 100 g orange peel, 170 g caster sugar, 3 eggs, 30 g flour, 1 tsp baking powder, 200 g blackberries (can be frozen), powdered sugar for sprinkling.
Instruction. Preheat oven to 180 ° C. Line a 28 x 22 cm baking dish with parchment. Grind the pistachios in a food processor or spice mill, but not too much, or the nuts will oily. Whisk in the butter and sugar until smooth, then stir in the eggs. Cut the orange zest into thin strips.

Don't panic if the blackberries drown in the dough while baking - this can happen, especially if the berries are small. Cool the muffin in the pan for 5 minutes, then transfer it along with the parchment to a wire rack to cool. Sprinkle with powdered sugar before serving.
Cupcake with honey, ginger and orange

Ingredients. 230 g of premium wheat flour, 100 g of butter 82.5%, 100 g of sour cream 20%, 2 tbsp. l. cane sugar, 150 g of liquid honey, 3 eggs, 10 g of baking powder, 3 cm of ginger root, the pulp of one orange (without peel and films), 1 tbsp. l. without a slide of ground cinnamon, 1/3 tsp. ground cloves, 1/3 tsp. nutmeg.
Instruction. Preheat the oven to 170 ° C. Beat the soft butter with a mixer with sugar until whitening. Add eggs one at a time while whisking. Pour in honey, sour cream, mix again. Peel and grate the ginger.
Add to liquid ingredients, along with orange pulp. Combine flour, baking powder, spices separately. Gradually add dry ingredients to liquid ingredients, stirring constantly until smooth.
