
Among the many desserts with ice cream, we chose a hearty date cake with viscous gelato and caramel, which you want to eat at any time of the day. We talked with the chef of the Richter restaurant Stepan Burmistrov and learned how to make a juicy cake at home.
Many dishes from the menu are associated with certain things or moments in my life. The idea to make a dessert with dates arose after a conversation with a guest from Morocco about long journeys and oriental legends, which happened in our hotel bar.
The dessert turned out to be very hearty and nourishing. Lots of homemade caramel inside, top with a ball of Italian gelato and a generous handful of pecans.
Ingredients for 3 servings
- Water - 825 ml
- Egg - 4 pcs.
- Dates - 550 g
- Soda - 9 g
- Salt - 13 g
- Butter - 180 g
- Sugar - 180 g
Ingredients for caramel
- Unrefined cane (brown) sugar - 225 g
- Cream 33% - 100 ml
- Butter - 30 g
- Whiskey - 25 ml
- Flour - 270 g
Top with a scoop of gelato or your favorite vanilla ice cream and sprinkle with nuts. We use pecans, if you wish, you can add any available ones.

How to cook
Bring water to a boil, then add baking soda and pitted dates. Let it simmer for 15 seconds and turn off. Then whisk the resulting mixture in a blender until smooth and let cool for 15 minutes.
Mash the butter with sugar and salt. Pour the cooled date mass and eggs into the butter, mix, gradually adding flour.
Before baking, grease the pan with butter and dust a little with flour. Pour the dough into a mold and cook in the oven at 180 degrees for 40 minutes.
While the date cake is baking, you can make the caramel. To do this, melt brown sugar in a saucepan until smooth and add cream and butter. Then pour in the whiskey and remove from heat.
After baking, remove the dessert from the oven and make many small holes in the dough with a fork or toothpick and pour over the caramel. Serve hot with ice cream on top and sprinkle with nuts.
