Today we have on the menu a very tasty and easy-to-prepare soup with beans and chicken meatballs. This soup is an excellent source of vegetable and animal protein, vitamins, micro and macro elements.
For the bean soup, I used canned chickpeas (chickpeas) and red beans. If you do not want to use canned beans, then take dry ones and boil them in advance.
Soup can be boiled in water, vegetable broth or chicken broth.
Ingredients
- Water or broth 2.5 liters.
- Chicken mince 500 gr.
- Canned chickpeas 220 gr. (70 grams dry).
- Canned beans 240 gr. (80 grams dry).
- Bulb onion 120 gr.
- Carrot 120 gr.
- Potatoes 300 gr.
- Vegetable oil 20 ml.
- Salt and pepper to taste.
- Greens to taste.
Soup with beans and chicken meatballs recipe
Peel onions, carrots and potatoes, rinse with cold water and cut. Onion strips, grate carrots for Korean carrots, or on a regular grater. Cut potatoes into thin sticks.
Rinse canned chickpeas and beans in cold water. In vegetable oil, fry carrots and onions until soft.
Add salt and pepper to the minced chicken to taste. Then divide the minced meat into equal parts of 10-15 grams, and roll chicken meatballs out of it. To make the meatballs roll easier, lightly dampen your hands with water. It doesn't have to be perfectly round.
Pour water or broth into a saucepan, add potatoes and place over medium heat. When the potatoes are half cooked, add the chicken meatballs.
Simmer the soup for another 2 minutes, then add the sautéed vegetables, canned chickpeas, and red beans.
Bring the soup with beans and chicken meatballs to a boil and cook for another 5 minutes. At the very end, add finely chopped greens, salt and pepper to taste. Remove the soup from the heat and let it steep for 1 hour.
